What better than a good red wine to accompany a good sirloin, or a good skewer, or some delicious grilled cutlets … in short, a good meal. Our wine list includes the best national wines such as Rivera del Duero or Riojas, not forgetting the DO grown in our Valencian land.
PROTOS ROBLE
Variety: Tinta del País 100%.
Vol. of alcohol: 14.5%.
Vineyards: Blend of different plots to achieve a
expression of our terroirs in the wines. ● Vineyards of
about 25 years.
Characteristics: ● Manual harvest. ● Fermentation and
maceration in stainless steel tanks at a
temperature of 26ºC.
Aging: 6 months in French oak barrels and
American. ● 6 months in the bottle.
Color: Cherry red with purple rim.
Nose: Frank and intense, where aromas of fruit stand out
red and black accompanied with spicy and light notes
toasted.
Mouth: It has a good structure, fruity, fresh, with a step
Sweet, balanced and with very pleasant soft tannins.
Pairing: Rice and pasta, chicken and poultry, beef,
mushrooms, sausages, grilled meats, lamb, pork,
semi-cured cheeses
Service temperature: 15 – 16ºC.


FINCA DE VALDEPIEDRA RESERVA
TASTING OBSERVATIONS
Color:
High intensity, cherry color and cardinal rim. abundant tear,
dense and tinted.
Nose:
High intensity, with great complexity and elegance in the aromatic matrix,
highlighting the mineral notes and red and black fruits, memories of
incense. All this together with the fine notes of wood from the
French oak, such as vanilla, cedar, blond tobacco and spices.
Taste:
In the initial phase of taste, it denotes an excellent softness and volume
developing a very fine tannic structure that makes it tasty and savory.
The freshness that Graciano brings makes it more balanced with
regarding alcohol, showing a very long aftertaste and a final
nice. Through the retronasal route the notes appear again
spicy, fruity and those from the wood.
Pairing:
Medium curing cheeses. Stewed red meats, baked lamb and
big game dishes (roe deer and chamois). Mountain dishes such as stew
montañés or black beans with pork.

E.MENDOZA CRIANZA.
Red wine made with the Merlot and Monastrell varieties by Bodegas Enrique Mendoza in the D.O. Alicante It is an elegant wine that combines the sweet and elegant Merlot grape with the Mediterranean character of the Monastrell. The production of wines such as Enrique Mendoza Shiraz is done with extreme care from its origin, the vine, using the most modern techniques to control the cultivation of grapes.


LES ALCUSSES.
Les Alcusses is a red wine from the D.O. Valencia prepared by Celler del Roure. This winery has a presence in the denomination: it has farms in the municipality of Moixent, in the southwest of the province of Valencia and in the Serra Grossa, a mountainous complex near the city of Gandía. Les Alcusses is a complete coupage of 60% Monastrell, the most precious variety in the southwest of Spain, 10% Garnacha Tintorera, 10% Cabernet Sauvignon, 15% Merlot and 5% Syrah.

Venta del Puerto N°12
Venta del Puerto Nº 12 reflects the diversity, complexity and richness of our environment. It is formed by a coupage of four varieties that give the wine structure, strength and character. A period of 12 months of aging in new American oak barrels, followed by a 6 month bottle rest, serve to round up and extol the strength of our land.


Bobal en Calma
Bobal in Calma is a 100% bobal red wine from our La Muela vineyard, harvested early in the day manually. Its aging is done in barrel for 9 months, then rest in the cellar. It has an intense aroma of red fruits that passes in the mouth fresh, fruity and soft. Perfect for cheese and pate tapas.

RAMON BILBAO CRIANZA gh intensity, with aromas of black fruit, plum and black cherry. Notes of liquorice, black pepper and sweet spices (vanilla and coconut). Very frank aromas, assembled and integrated.


Marqués de Burgos Roble.
Marqués de Burgos Roble is aged for 5 months in new American oak barrels from the Appalachians (70%) and French oak from the central part of France (30%). Tuned in the bottle for 10 months. Intense red icing very bright with purple trim. Aromas of ripe fruit and wild berries mixed with floral touches (violets). Marked licorice notes with memories of coffee, vanilla and cocoa. In the mouth it is velvety, fresh and meaty. Persistent and of great retronasal power.

Clea Crianza.
Varietal Tinta del Pais. With a aging of 14 months in French oak barrels of one and two years and collected in the harvest of the last week of September and the first of October of old low-production vineyards, selected from the best areas of Ribera del Duero for their mesoclimates and soils with great viticultural aptitude. Its elaboration consists of a malolactic fermentation in French oak barrels, with weekly batonage, and controlling the barrels one by one.


RIDUM ROBLE

MARQUES DE BURGOS CRIANZA
Marques de Burgos crianza wine is made with vineyards located above 850 m altitude and hand selected with low yields. Dark cherry red color, very bright and high layer. The nose is very expressive with a good presence of red fruit (cherry, berries) and black (blackberry, plum). When shaking the cup appear notes of low forest, aromatic herbs and balsamic tones, light roasted and chocolate, as the main contributions of barrel aging. Sweet and juicy tannins explode in the mouth. Tasty aftertaste. It perfectly accompanies legumes, stews, game, red meat and cured cheeses.


PAGO DE LOS CAPELLANES
Selected harvest in early October. Once the grapes are received in the cellar, the alcoholic fermentation is started in a controlled manner, with yeast addiction selected from our best vineyards, for 30 days with daily traces. The malolactic fermentation is carried out without bacteria addiction and the cellar is tempered at 20 ° C for 24 days, controlling the levels of malic acid and lactic acid. For 12 months the wine rests with French oak barrels of 300 liters of selected grain. At sight it offers us a very intense cherry color with cardinal trims. The nose is very frank, with aromas of ripe red fruit, balsamic touches. Its passage through the mouth is soft, filling the palate with exquisite plum and blueberry flavors, with a long and elegant finish. Stresses its balance and its acidity alive.
